Sweet potato fries can turn out soft if you are not careful, so this recipe uses Air Fry first and then Max Crisp to drive off moisture and crisp the edges. This step-by-step Ninja Crispi sweet potato fries recipe shows you exactly how to get them crispy, not soggy. For the classic version, my Ninja Crispi french fries use the same trick, and they are great next to my Ninja Crispi chicken thighs.
They are a healthier, homemade side with just a handful of pantry spices and a little oil. No deep frying required.
My take on this recipe
Sweet potato fries were always the ones that came out limp for me until I started doing two stages in the Crispi. The Air Fry step cooks them through, and the Max Crisp step at the end is what actually crisps the outside.
I keep the seasoning simple with garlic powder, onion powder, salt, and pepper, because the natural sweetness of the potato does the rest. My kids inhale these, and I feel good serving them since there is barely any oil.
Why you will love these fries
They are crispy, lightly sweet, and so much healthier than deep-fried. A little oil and a two-step cook give you that crave-worthy texture without a pot of frying oil or the mess.
They are also easy and flexible. The simple seasoning works with almost any meal, and you can dress them up with a dip or a sprinkle of extra spice. They make a great side or an afternoon snack.

The two-step method for crispy fries
Here is the whole secret: do not rely on one setting. Starting on Air Fry cooks the sweet potatoes through and begins browning them, but on its own it can leave them a little soft.
Switching to Max Crisp for the last few minutes blasts off the surface moisture and crisps the edges. That combination, Air Fry then Max Crisp, is what turns soft sweet potato fries into crispy ones. Give the basket a shake between steps so they crisp evenly.
Ingredients you will need
Just sweet potatoes and a few pantry staples.
- Sweet potatoes, cut into even fry-shaped sticks.
- Oil, a light toss to help them crisp and brown.
- Garlic powder and onion powder, for savory flavor.
- Salt and pepper, to season.
Exact amounts are in the recipe card at the bottom of the post.

Dips and ways to serve them
These fries are great on their own but even better with a dip.
- Ketchup or spicy ketchup
- Garlic aioli or chipotle mayo
- Honey mustard or ranch
- A sprinkle of cinnamon for a sweet twist
- Alongside burgers, Ninja Crispi chicken wings, or sandwiches
- With a cool yogurt dip

Tips for the crispiest sweet potato fries
Cut them evenly. Uniform fries cook and crisp at the same rate, so take a minute to cut them a similar size.
Do not overcrowd. Spread the fries in as close to a single layer as you can, and cook in batches if needed so they crisp instead of steam.
Shake between steps. Shaking the basket when you switch to Max Crisp helps every fry crisp evenly.
Do not skip Max Crisp. That final step is what makes them crispy instead of soft. New to your Crispi? See my complete Ninja Crispi guide.
Frequently asked questions
Air Fry them for 10 minutes to cook them through, then switch to Max Crisp for 5 to 10 minutes. The second step drives off moisture and crisps the edges.
You do not have to, but soaking the cut fries in cold water for 20 to 30 minutes and patting them very dry can make them even crispier.
Yes. Skip the oil and seasoning if they are pre-seasoned, and cook on Max Crisp, adjusting the time until crispy.
Usually they are crowded or were not crisped long enough. Spread them out and be sure to finish on Max Crisp.
Garlic powder, onion powder, salt, and pepper is a simple savory blend. Cinnamon or smoked paprika are great for a different flavor.

Storing and reheating
Store leftover fries in an airtight container in the fridge for up to 4 days, though they are best fresh.
Reheat on Max Crisp for a few minutes to bring back the crunch. Avoid the microwave, which makes them soft.
