Cooked right, they come out tender and lightly charred, never rubbery. They come together in about 25 minutes and feel special enough for company.     Quick note: Toss cleaned squid with oil and garlic, thread on skewers, and air fry at 400°F for 6 minutes (or grill 2 to 3 minutes per side) until opaque, then serve with a citrusy ponzu sauce.

    Squid used to intimidate me. My first few tries came out chewy, and I almost gave up. What turned it around was learning the golden rule: squid is tender when cooked either very fast over high heat or very slow in a long braise, and rubbery everywhere in between. Pairing it with ponzu was a happy accident one night when I wanted something lighter than tartar sauce, and now I make the two together every time.

    Ponzu is a bright, tangy Japanese sauce made from citrus juice, soy sauce, rice vinegar, and a little sweetness, sometimes with a touch of dashi or ginger. It is savory, sour, and a little salty all at once, which makes it perfect with seafood.

    You can buy bottled ponzu or whisk together a quick homemade version in a minute. Either way, it works as both a dipping sauce and a light drizzle.

    You only need a short list of everyday ingredients for these squid skewers, plus a few pantry staples for the ponzu.

    • Squid, tubes and tentacles, cleaned. Fresh or thawed frozen both work.
    • Sesame or olive oil, garlic, salt, and pepper to season the squid.

    Two small steps help. Pat the squid very dry before it goes in the oil so it sears instead of steams, and if you have time, soak it in milk for 20 to 30 minutes to gently tenderize it. After that, just do not walk away while it cooks.

    Cook hot and fast. High heat for just a few minutes keeps squid tender. The moment it turns opaque and curls, it is done.

    Pat it very dry. Drying the squid before oiling helps it char instead of steam.

    Soak wooden skewers. If you use wooden skewers, soak them in water for 20 minutes so they do not burn.

    Make the ponzu ahead. Whisk the sauce first so it is ready to drizzle the second the skewers come out.

    How long do squid skewers take in the air fryer?

    About 6 to 8 minutes at 400°F, flipping halfway, a minute or two longer for large whole tubes. Pull them the moment the squid turns opaque.

    Why is my squid rubbery?

    Rubbery squid is overcooked squid. It is tender only when cooked quickly over high heat or slowly braised, so aim for fast and hot here.

    Can I use store-bought ponzu?

    Absolutely. Bottled ponzu is a great shortcut. The homemade version just lets you control the salt and citrus.

    Should I use fresh or frozen squid?

    Both work. Frozen squid is often already cleaned and just as tender; thaw it fully and pat it very dry before cooking.

    Storing and reheating

    Store leftover squid in an airtight container in the fridge for up to 2 days, with the ponzu stored separately.

    Reheat gently in the air fryer at 350°F for 2 to 3 minutes, just until warm, so the squid does not toughen.

    Squid Skewers with Ponzu Sauce

    Ingredients
      

    For the squid

    • 1 lb squid tubes and tentacles, cleaned
    • 1 tablespoon toasted sesame oil or olive oil
    • 1 clove garlic minced
    • ½ teaspoon salt
    • ¼ teaspoon black pepper

    For the ponzu sauce

    • ¼ cup soy sauce
    • 2 tablespoons fresh lime or lemon juice
    • 1 tablespoon rice vinegar
    • 1 teaspoon mirin or honey
    • ½ teaspoon grated fresh ginger optional

    • 2 green onions sliced

    Instructions
     

    Air fryer method

    • Leave the 1 lb squid tubes whole, along with the tentacles, and pat everything very dry.
    • Toss the squid with the 1 tablespoon sesame oil, 1 clove minced garlic, ½ teaspoon salt, and ¼ teaspoon black pepper. Thread each whole tube lengthwise onto a skewer (soak wooden ones first), adding the tentacles too.
    • Air fry at 400°F for 6 to 8 minutes, flipping halfway, until the squid is opaque and lightly charred. Large whole tubes may need a minute or two longer.
    • Meanwhile, whisk together the ¼ cup soy sauce, 2 tablespoons lime juice, 1 tablespoon rice vinegar, 1 teaspoon mirin, and ½ teaspoon grated ginger to make the ponzu sauce.
    • Drizzle the skewers with some ponzu, top with the 2 sliced green onions and 1 teaspoon sesame seeds, and serve with the rest of the ponzu and lime wedges for dipping.
    • Tip: Squid is tender only when cooked fast over high heat, so pull the skewers the moment the squid turns opaque and curls; a minute too long makes it rubbery.

    Grill or stovetop method

    • Toss and skewer the squid as above.
    • Heat a grill or grill pan over high heat and cook the skewers for 2 to 3 minutes per side, until opaque and lightly charred.
    • Serve with the ponzu sauce, green onions, sesame seeds, and lime wedges.

    Notes

    Make ahead Whisk the ponzu up to a week ahead and keep it in the fridge; toss and skewer the squid up to a day ahead and cook it fresh.
    Store leftover squid in an airtight container in the fridge for up to 2 days, with the ponzu stored separately.
    Freeze Cooked squid does not reheat well from frozen, so freeze raw cleaned squid instead and cook it fresh.
    Reheat gently in the air fryer at 350°F for 2 to 3 minutes, just until warm.
    Substitutions Bottled ponzu works in place of homemade; shrimp or scallops work in place of squid with the same quick, high-heat method.
    Pro tip Pat the squid very dry before oiling so it chars instead of steams. Scoring whole tubes lightly on one side is optional, but it helps them cook evenly and soak up more ponzu.
