    It is also budget-friendly and totally in your control. When I am truly out of time I will grab a Kirkland rotisserie chicken instead - but roasting your own costs less, and you get to season it exactly how your family likes it.

    The Seasoning Blend

    This is where the flavor lives, so do not be shy. I use a savory, slightly warm blend of salt, paprika, garlic powder, and onion powder as the base, then build it up with ground coriander, turmeric, dried thyme, and marjoram.

    A small pinch of ground red pepper adds gentle warmth without making it spicy, and a little black pepper rounds it out. If you like, a touch of ground ginger or dried dill is lovely here too. Rub it over oiled skin and really work it into every side so the whole bird tastes seasoned, not just the top.

    A roast chicken is a blank canvas, so almost any comforting side fits.

    • Roasted or mashed potatoes
    • A simple green salad or steamed green beans
    • Rice pilaf or buttered noodles
    • Crusty bread to soak up the juices

    • A scoop of coleslaw for something cool and crunchy

    Tips for a Juicy Whole Chicken

    Pat it really dry. Drying the skin inside and out is the biggest key to crispy, golden skin instead of pale, steamed skin.

    Set it breast-side up. Place the bird breast-up and leave it - no flipping needed. The skin on top crisps and browns while the chicken roasts.

    Ingredients
      

    • 1 whole chicken about 3.5-4 lbs
    • 1 tablespoons olive oil
    • 1 teaspoon salt
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • ½ teaspoon ground coriander
    • ½ teaspoon dried thyme
    • ½ teaspoon dried marjoram
    • ½ teaspoon turmeric
    • ¼ teaspoon ground red pepper cayenne

    Instructions
