Slow cooker pot roasts are an excellent dish to make during the cooler months. You pretty much throw everything into the pot and then let it cook for several hours. It is very easy to clean up and you can serve it as is or with dinner rolls for a super easy dinner.

Even though this pot roast recipe is made using a Ninja Foodi possible cooker pro, you can use whichever slow cooker you have. I love to use the Ninja Foodi possible cooker because you can sear the meat right inside the pot without having to heat up the stove or dirty up any extra dishes.
After searing the meat, all the ingredients are added to the same pot to cook for several hours and become very delicious!
Recipe ingredients
Beef. Chuck roast is also known as pot roast or arm roast. This is a thick and meaty cut of beef with delicious flavor. It is a favorite to use in pot roast recipes because the long cooking time helps to break down the tough meat.
Vegetables. Chopped onion, celery, baby carrots, and baby potatoes.
Worcestershire sauce. Used to give a savory richness to the pot roast.
Beef broth. This cooking liquid is used to keep the roast moist, tender, and juicy and it gives an even richer beefy flavor to the stew.
Olive oil. Used to sear the chuck roast.
Seasonings. Fresh thyme, salt, black pepper, and garlic powder.

Get all of your ingredients which include a choice cut of meat (like a chuck roast or similar), salt, pepper, garlic powder, onions, carrots, celery, potatoes, broth, Worcestershire sauce, and fresh thyme. Make sure your vegetables are washed, peeled if necessary, and cut into the desired sizes.
Turn on your Ninja Foodi Possible cooker to its SEAR function. Add the oil and allow it to heat until shimmering. While the oil heats, season your meat generously on all sides with salt, pepper, and garlic powder.
Once the oil is ready, place the meat into the cooker, searing undisturbed for about 3 minutes on each side until it forms a golden-brown crust. This browning step locks in flavors and enriches the final taste of the roast.

After searing the meat, add the onions, carrots, celery, and potatoes around it in the cooker. The vegetables will absorb flavors from the meat and seasonings over the cooking duration, becoming tender and flavorful.
Next, pour the broth over the meat and vegetables. Make sure there's enough broth to keep everything moist but not so much that the roast is submerged. Add a few dashes of Worcestershire sauce and sprinkle fresh thyme over everything.

Substitutions
Chuck roast. Other options can be a top-round roast, bottom-round roast/ rump roast, chuck arm steak, or beef arm roast. These cuts of meat are all very affordable and work well when slow-cooked for long periods of time.
Garlic powder. You could easily use fresh or jarred garlic instead.
Broth. Use chicken broth. Water with a beef bouillon cube is also great to use if you don't have beef broth on hand.
Worcestershire sauce. If you don't have it, use a little bit of soy sauce and ketchup/ brown sugar, or simply leave it out!
Storage and reheating
To store leftover pot roast, let it cool to room temperature, then transfer to an airtight container and refrigerate for up to 3-4 days.
For reheating, place the desired portion in a microwave-safe dish and heat in the microwave until warmed through, or warm it on the stove over medium heat, stirring occasionally, until hot. If the dish seems dry, add a splash of broth or water during reheating.

Both are great options and it really comes down to time. Because of the long cooking time for slow cooker pot roasts, the ingredients really get a chance to break down and develop a deeper flavor. A pressure cooker is also a great option for pot roast if you are short on time because it gives you a similar taste and flavor to a slow-cooked stew but only takes a fraction of the time.
Your pot roast might be tough if you didn't cook it for long enough or on the right setting. On average, if you are cooking your pot roast on the LOW setting, it will take about twice the amount of time to cook than on the HIGH setting. Add another 30 minutes - 1 hour as needed until the roast is tender.
You don't have to, but it's a highly recommended step! Browning the meat first is an easy way to give the meat more of a richer depth flavor.
The liquid doesn't have to completely cover the meat, but it's best if it's at least Ā¼ of the way up the meat. The vegetables and other ingredients used in the recipe will also create juices that will help keep the roast tender and juicy the whole time.

Ninja Foodi Possible Cooker Pro Pot Roast
Ingredients
- 1 Ā½ lb chuck roast
- 1 onion chopped
- 3 celery ribs chopped
- 2 cups baby carrots
- 1 lb baby potatoes
- 2 tablespoon Worcestershire sauce
- 2 cups beef broth
- 3 sprigs fresh thyme
- 1 tablespoon olive oil
- 1 tablespoon black pepper
- 1 teaspoon salt
- 1 tablespoon garlic powder
Instructions
- Heat oil in the possible cooker using SEAR function. Season meat with salt, pepper and garlic powder and place in the heated oil. Brown on each side for 3 minutes.
- Add onions, carrots, celery and potatoes. Add broth and Worcestershire sauce. Add thyme.
- Close the lid and set the pot to slow cook for 4 hours on HIGH or 8 hours on LOW.
