    Walleye ceviche (Easy and Fresh!)

    Walleye ceviche is a fresh, no-cook way to turn a single walleye fillet into a light, citrusy appetizer that tastes like summer. The lime juice gently cures the fish until it is opaque and flaky, no stove required. Walleye is mild, sweet, and clean-tasting, which makes it perfect for ceviche. If you love this style of dish, my grouper ceviche and my squid skewers with ponzu sauce are two more fresh seafood favorites. For quick weeknight fish, I also lean on my air fryer grouper, air fryer snapper, and air fryer jerk salmon.

    It is one of the easiest ways to enjoy a fresh catch. This step-by-step walleye ceviche recipe shows you how to cure the fish and build a bright, crunchy mix with tomato, cucumber, red onion, and jalapeno.

    Quick note: Dice fresh walleye small, cover it fully in fresh lime or lemon juice with a little salt, and refrigerate until the fish turns opaque, about 2 to 3 hours. Stir in tomato, cucumber, red onion, cilantro, and jalapeno, then serve cold.

    My take on this recipe

    Ceviche was one of those dishes I always ordered out and assumed was complicated, until I realized the lime does all the work while it sits in the fridge. Walleye is my favorite fish for it because it is so mild and never fishy, and a single fillet stretches into a whole bowl once you add all the vegetables.

    My one rule, learned the careful way, is to start with very fresh or previously frozen fish, since the fish is never cooked with heat.

    Is walleye good for ceviche?

    Yes, walleye is a great choice. It is a lean, mild, slightly sweet freshwater fish with firm, flaky flesh that holds its shape as it cures in the lime juice. Because the flavor is so clean, it lets the citrus, cilantro, and jalapeno shine.

    Since ceviche is never cooked with heat, the fish quality matters. Use the freshest walleye you can, ideally fish that has been frozen first, and keep everything cold from start to finish. If you would rather cook your fish another night, my air fryer barramundi is a quick, buttery option.

    Ingredients you will need

    You only need a fresh fillet and a handful of vegetables, most of which you may already have on hand.

    • Walleye fillet, skinless and diced small.
    • Fresh limes, enough juice to fully cover the fish.
    • Tomatoes, cucumber, and red onion for crunch and freshness.
    • Jalapeno and cilantro for a little heat and herby brightness.
    • Avocado (optional) stirred in at the end for creaminess.
    • Salt and pepper to season.

    How to make walleye ceviche

    The method is mostly hands-off waiting while the lime or lemon does the work.

    1. Dice the walleye into small, even pieces and place them in a glass bowl.
    2. Pour over enough fresh lime juice to cover, add salt, and refrigerate until the fish turns opaque and firm.
    3. Drain off some of the lime juice, then fold in the tomato, cucumber, red onion, cilantro, and jalapeno.
    4. Gently stir in the avocado if using, taste for salt, and serve cold.

    Tips for the best walleye ceviche

    Start with very fresh fish. Since the walleye is cured, not heated, use the freshest fillet you can, ideally previously frozen, and keep it cold.

    Dice it small and even. Small, uniform pieces cure faster and more evenly in the lime juice.

    Use enough lime to cover. The fish needs to be fully submerged so it cures all the way through. Fresh-squeezed juice works best.

    Do not over-cure. Once the walleye turns opaque, stir in the vegetables. Leaving it too long makes the texture tough.

    Add avocado last. Fold it in right before serving so it stays creamy and does not turn to mush. For a warm seafood dish another night, my halibut cheeks are tender and quick.

    Storage

    Store walleye ceviche in an airtight container in the fridge for up to 1 day. It is best the same day it is made, since the lime keeps curing the fish and softening the texture over time.

    Do not freeze finished ceviche; the vegetables and cured fish turn watery and mushy once thawed.

    • 2 tomatoes
    • 1 small bunch cilantro
    • 1 walleye fillet
    • 1 small red onion or yellow onion
    • 1 avocado optional
    • 1 cucumber
    • 1 jalapeno
    • 4 limes or 1 lemon

    Instructions
     

    • Dice tomatoes, onions, avocado if using, cilantro, jalapeno and cucumber and place in a medium size glass or ceramic bowl.
    • Add cubed raw walleye. Juice limes or lemon right into the bowl and add salt and pepper. Mix everything very well.
