How to make roasted skate wing
Start with preheating the oven to 350 degrees. We will not be cooking skate on a high temperature. Lower is better. If your skate is frozen, thaw it first. You can easily do it by leaving fish in the fridge overnight. Optionally you can just leave it on the counter for a few hours and it will get defrosted. Fridge method is preferred.
Rinse fillet with running cold water and pat dry with paper towels. Place fillet on the prepared baking dish. You can lay the bottom of the dish with oven safe parchment paper or foil for easy clean up.
Add a splash of white dry wine right on the fish. This step is optional and you can skip it if you want. Sprinkle salt and pepper on the fillet as well.
Thinly slice about half of lemon and place it on top of the fish. Get butter and cut it in smaller chunks and place it on top as well. Now its ready to go into the oven!
Cook for about 20 minutes, depending on the size of your fish piece. Check the internal temperature if needed, it should be 145 degrees when fully cooked.
What does it taste like
The texture of the skate wing is kinda similar to a scallop or maybe a lobster, it definitely doesn't taste like a regular fish. I would say that it reminds me like monk fish tastes a lot.
Skate has a very mild flavor, it has a very firm flesh and the collagen contain is very high as well. This gives the fish that unique texture and firmness.

Skate is diamond shaped fish that lives in most parts of the world. It easy to find skate fish and in Arctic waters and in tropics. The best known edible part of a skate is its wing. Wings are their side fins that kinda look like wings when the fish is going through the water.

Where to buy
It depends on where you live but usually you can get either fresh or frozen skate from online fish markets. I am usually buying mine from the store in New York. The fish comes fresh with ice packs around it and is already skinned. The wing is pretty big, about 1 pound. So please look closely at the weight of your fillet and adjust the cooking time.
Since skate is that kind of fish that lives almost everywhere, ask your local fisherman if they have it. I haven't seen it in big stores here in California but smaller fish markets will possibly have it.
Side dishes for baked skate wing
Oh i love to eat skate with roasted potatoes. This is probably the best way to enjoy this fish is my opinion. Any other roasted or grilled vegetables will be great too. The delicate flavor of freshly cooked skate wing can be only accompanied with something mild, not too overpowering.
Arugula salad with light dressing, couscous or white or brown rice, all of these side are sch an excellent choice as well.
What to do with leftovers
You can store baked skate leftovers in the fridge for up to 3 days in a air tight container. Fish doesn't stay fresh in the fridge for long so try to eat the leftovers quick. I do not recommend freezing cooked fillets because it may become rubbery and tough after reheating.
Expert tips
- If not sure that the fish is cooked all the way through, use an instant meat thermometer. Fully cooked white fish should be at least 145 degrees Fahrenheit.
- Use only high quality unsalted butter in this recipe. Why unsalted? Because if you already measured and added salt on the skate, salted butter may oversalt final dish.
- Lemon is essential when cooking white dish. It opens up the flavor and add that additional touch baked skate. Add sliced lemon on top and squeeze some lemon right on top of the fish before serving.
- Don't overcook the fish. It will get tough and chewy.
- Adjust cooking time if your fish is smaller. I had a very large fillet that weighted 1 pound.

- 16 oz skate wing
- 1 lemon
- 2 tablespoon butter
- splash of white wine (optionally)
- Ā½ teaspoon salt
- Ā½ teaspoon pepper
Instructions
- Preheat oven to 350 degrees.
- Rinse and pat dry skate. Place on the baking dish. Sprinkle salt and pepper all over the fillet. Cut butter in chunks and evenly place on fillet, along with lemon slices. Add a splash of wine if using.
