Refreshing fluke ceviche recipe is not only a great appetizer but a delicious meal to impress your guests. Crunchy onions mixed with fresh fish and zesty lime juice, serve it on a crispy tostada or with your favorite chips.
Fluke is a great fish to use in ceviche. Its sweet taste and firm texture is perfect for baking, grilling and for use in ceviche of any kind. You can also try to make Crab ceviche or salmon avocado ceviche. I have both of those recipes on my site and they both are equally amazing and flavorful.
How to make fluke ceviche (overview)
Fluke ceviche should not be made ahead of time. Serve it as soon as its ready.
Get a red onion and thinly slice or chop it. Finely chop cilantro and add to the onion. Get the fish fillet and rinse in under the cold water. Chop in about 1 inch pieces or smaller and add to the bowl.
I like when my ceviche has a spice kick to it so i like to add about Ā½ chopped jalapeno. You can remove the seeds and add it if you like it mild. Jalapeno will add a nice crunch. Use other peppers like red chilly or habanero peppers if you have some.
Get two limes and roll them on the table with pressure. It will help to get the most juice out. Slice limes in half and juice them right into your bowl. Add salt and pepper to taste. I added 1 teaspoon each but it may look like a lot of salt for some people. Adjust the saltiness to your taste.
Stir your fluke ceviche and serve with plantain chip, tortilla chips or tostadas.
What is fluke fish
Fluke, also known as Vineyard sole, Summer Flounder, or simply Flounder is a mild white saltfish a part of the flatfish family. Flatfish are bottom-dwellers with wide, flat bodies. It is a very popular seafood choice across the world and is especially popular during the summertime.
Fluke is sold as whole fish or in thin fillets that are usually skinned. It is also low in mercury, making it safe to be consumed by pregnant women and kids. This fish is very versatile and it can be prepared in many delicious ways! Plus it tends to be very inexpensive ā win! Fluke ceviche is one of my favorite way to use this delicious fish.
What is the difference between fluke and flounder
Fluke and flounders are a type of flatfish. Fluke is flounder and mostly lives in the North Atlantic ocean. They swim right-side-up and are sometimes called āsummer flounderā. Flounder or right-side fish are called āwinter flounderā, it lives more north and is darker than other flounder species.

There are 5 different species that are collectively called āflounderā, but the biggest thing to remember is that fluke is flounder.
Does ceviche actually cook the fish
I received lots of comments on my other ceviche recipe stating that the lime juice should kill all the bacteria and other things in the raw fish if you let it sit in it for while. Well this is not true. Lime or lemon juice just don't cook the fish.
It chemically denatures the proteins in your fish but doesnāt kill parasites or bacteria. If you want to soak fluke in juice longer for flavor go for it but it will not cook it. The only way to kill bacteria is to heat the fish.
Fluke ceviche recipe tips and tricks
- Do not use metal or plastic bowl if you are making fluke ceviche. Citrus can react with metal and give your ceviche a bad taste. Same with plastic.
- You can adjust the heat by adding more or less hot peppers. Also you can remove the seeds to make it taste milder.
- Lemon is ok to use instead of lime
- Try to use freshly squeezed lime or lemon juice in this recipe. Do not use the bottled one, ceviche will no taste the same.
- To get the most juice out of lime, roll it on the table before cutting.
- Red onion is milder then yellow onion. Use the one you like more.
- Add chopped avocado for creaminess. Or corn for an extra crunch.
What to do with leftovers
I do not recommend storing fluke ceviche leftovers. It should be eaten right away. After all its still just a raw fish and it will go bad quick. Serve it as quick as its cooked. In Peruvian restaurants here in California i was getting the best fresh fluke ceviche that was cooked to order.
And one more thing, i don't recommend freezing already thawed fish. Do not freeze fluke ceviche.

Ingredients
- Ā½ red onion
- 6 oz fluke fillet
- 2 limes
- Ā½ jalapeno
- 1 teaspoon salt
- 1 teaspoon pepper
- Ā¼ cup chopped cilantro
Instructions
- Thinly cube red onion, add chopped cleaned fluke fillet. Add chopped jalapeno (adjust the amount of spice to your taste).
- Add chopped cilantro, juice of 2 limes , salt and pepper. Mix.
- Serve immediately.
