At first, don’t use any oil in your frying pan. That will prevent livers from browning. Use a dry pan (small size pan will be perfect for a 1/2 lb recipe) and cook livers over the medium heat for only 4-5 minutes, until no longer pink inside.

Do not overcook chicken livers, otherwise they will become dry. When most of the moisture is gone from the liver, it becomes very dry that is hard to swallow. Same thing happens with beef liver. Even one or two extra minutes could be crucial, so watch them closely.
Where to buy chicken liver.
Not every store sells it. In Northern California this chicken parts could be found in big stores like Walmart, Foodmax or Safemart. Livers are usually sold in 1 lb plastic containers for about 3$ per pound. For this recipe i used only 1/2lb so it cost about 1,2$ per bowl. Along with the liver stores sell things like chicken feet, beef kidneys and beef heart with a pretty good price per pound.
