This pressure cooker potato soup is made in the Ninja Foodi, but you could also use an Instant Pot just as easily! By cooking it in an electric pressure cooker, this recipe is almost hands-off and ready in no time. Recipe ingredients
Potatoes. Make sure to cut them roughly the same size so that they can cook evenly inside the pressure cooker.
Chopped onions and garlic. Adds rich flavor to the soup.
Thyme. A nice dried herb that pairs well with potatoes.
Salt and black pepper. Everyday kitchen seasonings. Freshly ground black pepper will have the best flavor!
Butter. Used to cook the onions and garlic.
Milk and heavy cream. Used to get the perfect creamy consistency.
Broth. Gives a lot of flavor to the potato soup rather than just using water. Chicken or vegetable broth would both work great!
Cornstarch. Used to thicken the soup.
Cheddar cheese. Use your favorite type of shredded cheese. It adds a nice cheesy depth of flavor.
Bacon. Cooked and chopped into pieces. It adds a smoky flavor and a nice crunch.
Chopped green onion. Pairs well with potatoes, bacon, and cheese. Used for garnish.
How to make Ninja Foodi potato soup
Chop onions and add to the Ninja Foodi inner pot along with butter and garlic. It should take no longer than 5 minutes for them to become fragrant. Meanwhile wash and peel potatoes. Cut them in big pieces and add to the pot.
Add broth. I use chicken broth but any broth will work. You can even dilute chicken bouillon in water according to instructions on the package and add that.
Close and lock the lid. Pressure cook for 8 minutes and quick release the pressure. Make a slurry out of milk and cornstarch. Make sure that the milk is cold! Stir well and add to the soup. Add heavy cream or half and half and stir.

What kind of potatoes work best for soup
Potatoes with a high starch content like Russets work the best for loaded potato soups. You could also use Yukon Golds or Red Potatoes. These aren't as starchy but they have a nice creamy texture when cooked.
If you decide to blend your soup before serving, make sure not to over-blend the soup. Waxier potato varieties like Yukon Golds and Red potatoes can sometimes become gummy when overworked.

I used the Ninja Foodi pressure cooker for this recipe but you can use an Instant Pot or any other electric pressure cooker you have will work just fine. Just keep in mind that the settings or cooking time might be a little different.
Storage
I like to store soup leftovers right in the inner pot. I just cover i with a flat plate, foil or the right size lid and keep it in the fridge for couple days. Reheat in the same pot in Ninja Foodi on SAUTE setting until hot.
If using an air tight plastic or glass container, store in the fridge for up to 5 days. Reheat in the microwave. Great to take leftovers to work and easy reheat right in the container.

- 2 tablespoon butter
- 1 onion
- 3 cloves of garlic
- 1 teaspoon thyme
- 2 lb potatoes
- 4 cups broth
- Ā½ cup milk
- Ā½ cup heavy cream
- 1 teaspoon salt

- 3 slices of bacon , cooked and chopped
- Ā½c cup chopped green onions
- 1 tablespoon cornstarch
Instructions
- Using Ninja Foodi SAUTE function, saute chopped onions with butter and garlic for about 5 minutes.
- Add cubed potatoes and broth. Close and lock the lid. Pressure cook for 8 minutes. Quick release the pressure. Carefully open the lid.
- Mix cornstarch with cold milk and add to the soup. Stir well and turn on SAUTE button. Add heavy cream and stir. Serve with chopped green onions chopped bacon and shredded cheese.
