How to make Ninja Foodi potato salad
For this recipe i picked red potatoes because they are my favorite. You definitely can use any other kind of potatoes, the one you like the most!
So if you picked red potatoes, just scrub them really good, wash and there is no need to peel them. Potato skin is very nutritious. Plus I really like spending less time preparing my meal and more time enjoying it.
If potatoes are small, just simply quarter them, if they are medium to large in size, cut them in 6-8 even chunks. There is a reason why we chop potatoes before cooking. Since we are going to cook eggs and potatoes together, we want to make sure that they both will cook through at the same time.
Big whole potatoes will need more time to cook. Place chopped potatoes in to the steamer or air fryer basket. I just simply use air fryer basket when pressure cooking too. Place eggs on top of potatoes and place the basket in to you Ninja Foodi inner pot. Add water and close and lock the lid . Cook on high pressure for 4 minutes and quick release the pressure in the end. Place eggs into an ice cold water.
Meanwhile chop onions and celery and add to the bowl. Add cooled potatoes and add peeled and chopped eggs. Add Mayo mixed with mustard, salt and pepper. Stir all the ingredients to combine.
Can I make it in instant pot
Absolutely! Instant pot just like a Ninja foodi is a pressure cooker. Use steamer basket in instant pot and follow instructions without changing anything. You will get the same amazing results and delicious salad.
Can i make it ahead of time
This Ninja foodi potato salad gets only better overtime. Make it a night before the event and serve next day. Keep it in the fridge, covered. It will help flavors to blend and create an amazing creamy salad everyone will like.

Other potatoes to use
I am a fan of small or medium size red potatoes because they taste good and you don't need to peel them. Which makes the salad so colorful and festive. Another option is Yukon or golden potatoes. Mayo or miracle whip
I like to use real mayonnaise in my potato salad. If you prefer Miracle whip instead, substitute it in equal proportions.
What to serve it with
Usually potato salad is a side dish a served with a large variety of meals. Try it with chicken wings, steak, pork neck bones. It will go well with any fish or seafood dinner. You can even serve it with a sandwich.
Recipe tips and tricks
- Make potato salad couple hours before dinner time. Let it sit in the fridge to let all the flavors blend.
- Add paprika on top of the serving bowl. It will look very festive and will not affect the taste.
- Onions and celery are optional. If you don't like crunch in your salad don't add any. Stay with potatoes and eggs only.
- Avoid using starchy potatoes like Russet. They tend to turn into mush in the salad because they don't hold their shape well.
- Try adding pickles for some zing. Any jarred pickles will work.
- To light things up try subbing half of the mayo with sour cream or Greek yogurt.
- For a more interesting taste add chopped crunchy bacon and mix it in to the salad.
- Substitute yellow onion with red onion. Its sweeter and not as harsh.
- I am Russian and we cook almost everything with dill. If you like to add herbs, add chopped dill to the bowl, not to much because it has a pretty strong flavor.
- You can easily double or triple this recipe.
Leftovers
Ninja foodi red potato salad will keep in the fridge for 3-4 days. Place it in to the container with an air tight lid or just simply cover the bowl with plastic wrap or a piece of foil. You can also just place a flat plate on top to cover the salad dish. Do not freeze.

Ninja foodi red potato salad

Ingredients
- 7 red potatoes (medium size)
- 1 Ā½ cup water
- 4 eggs
- Ā½ cup onion (chopped)
- Ā½ cup mayo
- 1 teaspoon Dijon mustard
- 2 celery ribs
- Ā½ teaspoon salt
- Ā½ teaspoon black pepper
Instructions
- Scrub any dirt off potatoes and wash them. If potatoes are small, just quarter them, if medium cut them in about 6 pieces. Place in the air fryer basket or steamer basket. Place the basket in to the ninja foodi inner pot. Add water and eggs right on top of potatoes.
- Close and lock the lid. Cook on High Pressure for 4 minutes. Quick release the pressure once done. Immediately move eggs into an ice bath (ice cubes filled bowl). Let potatoes cool naturally.
- Meanwhile chop onions and celery and place in to a big bowl. Peel eggs and chop them. Add to the bowl. Add potatoes (chop them more if you want).
- Add mayo, mustard, salt and pepper to the bowl and stir. Serve.
