This pork tongue is indeed so tender it just melts in your mouth! I don't know how to describe this dish better but its incredible. So flavorful! This recipe might be not for everyone but who enjoys offal meat will definitely love this pig tongue recipe.
How to cook pork tongue in pressure cooker
Start with washing pork really good. Brush and scrub it to make sure you remove any dirt or leftover hair.
Now place tongues in to your pressure cooker. I used the 8qt Instant Pot but 6 qt pot will work as well. If you own a Ninja Foodi or any other pressure cooker your directions will be the same.
Add other ingredients to the pot. In this recipe we also use ingredients like:
- Ginger. An essential ingredient when cooking Asian inspired dishes.
- Chinese cooking wine. Very popular ingredient in Chinese cooking. This rice wine is widely used in soups, stir fries and marinades.
- Ground white pepper. I love to add white pepper in many dishes. It has a different flavor than a black pepper and adds that special touch.
- Soy sauce has a strong umami flavor and is an essential ingredients in this pork tongue recipe.
- White sugar. Adds sweetness to the dish.
- Star anise is very popular in Chinese cooking and it remind me of a fragrant and mild licorice flavor.
- Salt and black pepper. You can't really cook anything without this basic ingredients.
Next step is to simply add water, there is no need to cover meat entirely with it. Give ingredients a good sir and close the lid and lock the lid. Bring Instant pot to a high pressure and cook for 30 minutes. Once done, carefully quick release the pressure.
Take tongues out and set aside. Wait until they will cool enough for you to be able to hold them with your fingers. Peel skin, it should come right off. Slice tongue using a very sharp knife. It will be much easier to slice them if you will wait until they completely cool off. Otherwise the tongue will be very soft and hot and you will definitely need to use a good grip on it.
Is it good to eat
Pig tongue is full of fatty acids, zinc, iron and vitamin B12. Its not a low calorie food and will fill you up quickly. Its great cooked, peeled, sliced and than either eaten cold on a piece of bread or warm by itself.
What does is taste like
The taste is not much more different than the taste of the other pork muscle. You can definitely taste that its more fatty and the texture is a different but its delicious.
Pork tongue vs beef tongue
Pork tongue doesn't have such a bright stand out flavor like beef tongue, it does feel a bit bland in comparison. I like both dishes and prefer to cook both tongues in my pressure cooker. Pork tongue takes significantly less time to cook though than beef tongue.

Pork tongue in slow cooker
If you would like to make this recipe in crock pot, you definitely can. Add washed and brushed tongues in tot he pot, add other ingredients and close the lid. Cook on HIGH for 3-4 hours or on LOW for 6-7 hours. Meat should be very tender and just as delicious!
Expert tips
- Don't peel raw tongue. Brush and scrub it really good before pressure cooking though. When the tongue is cooked, the skin will peel right off. Super easy and quick.
- For a spice kick add chopped canned or fresh jalapenos. About Ā½ cup or more.
- Chopped green onions are essential for serving. They add color, flavor and crunch.
- If cooking from frozen pork tongues, add another 15-20 minutes to the pressure cooking time, depending on the tongues thickness.
- Every pressure cooker will work. Instant pot, Ninja foodi, you name it. No need to change a thing in the recipe or directions.
Side dishes
Pork tongue recipe is something you can enjoy by itself as an appetizer, topped with chopped green onions and cilantro (if you like cilantro of course).
A big bowl of steamy white rice topped with hot flavorful pork tongue will be delicious! You can also scoop some of that yummy broth right on top of rice to create a fantastic filling meal.
If you like potatoes, make garlic mashed potatoes and watch flavor explode in your mouth. Creaminess form potatoes and the delicious texture form the pork pair so well together.
How to store pig tongue leftovers
You can store leftovers in the fridge in the air tight container for up to 5 days. Add some broth to the container as well. It will ensure that pig tongues will stay fresh and will not dry out. You can also freeze pork tongue in the freezer safe container or a zip lock plastic bag. Keep in the freezer for up to 6 months. And again, add some broth to it.
Do not fill up the freezer container with broth entirely because it will liquid will expand when frozen.

Ingredients
- 2 ā lb pork tongues
- 1 inch ginger
- 2 star anise
- 1 tablespoon white pepper
- Ā¼ cup white sugar
- Ā¼ cup Chinese cooking wine
- 3 tablespoon soy sauce
- beef stock, about 2-3 cups
- Ā½ tablespoon salt
Instructions
- Scrub and wash pork tongues. Add to the pressure cooker inner pot.
- Add other ingredients and add beef stock about half way.
- Set the pressure cooker to a high pressure for 40 minutes. Once done, quick release the pressure.
- Peel tongues and slice. Serve with chopped onions and broth.
