I just love chicken livers. Growing up in Easter Europe and Russia we were eating chicken livers a lot. In fact, we were eating all parts of chicken...chicken feet and carcass were used for delicious bone broth, hearts and gizzards for a hearty stew.

At first, don't use any oil in your frying pan. That will prevent livers from browning. Use a dry pan (small size pan will be perfect for a Ā½ lb recipe) and cook livers over the medium heat for only 4-5 minutes, until no longer pink inside.
If you like liver with onions, i recommend cooking onions first until fragrant and them adding raw liver. This will ensure that you dont overcook the liver while onions are undercooked.

I really like how garlic tastes in this recipe so i added 3 chopped cloves in the end of cooking. Garlic can be minced too, thats a personal preference.
Do not overcook chicken livers, otherwise they will become dry. When most of the moisture is gone from the liver, it becomes very dry that is hard to swallow. Same thing happens with beef liver. Even one or two extra minutes could be crucial, so watch them closely.
Where to buy chicken liver.
Not every store sells it. In Northern California this chicken parts could be found in big stores like Walmart, Foodmax or Safemart. Livers are usually sold in 1 lb plastic containers for about 3$ per pound. For this recipe i used only Ā½lb so it cost about 1,2$ per bowl. Along with the liver stores sell things like chicken feet, beef kidneys and beef heart with a pretty good price per pound.
Do you wash chicken liver before cooking?
I wash all the chicken i deal with, and chicken liver is not anything different. Wash it in the cold water to remover the possible bitterness. Dont forget to remove all the connecting tissue before cooking.

Ingredients
- Ā½ lb chicken liver
- 3 cloves garlic
- Ā½ small lemon
- salt, pepper
- splash of olive oil
Instructions
- Rinse chicken livers, discard connective tissue. Chop or leave whole.
- Place liver on the dry pan and cook on medium heat for 5-7 minutes until no longer pink.
- Chop garlic and add to the dish in the end of cooking along with the juice of a lemon. Add olive oil, salt and pepper to taste and serve.
Notes
Serve on a piece of bread or with your favorite veggies and grains.

You don't mention puree the mixture. If you don't and if you don't cut up lllvers at the start it will not be pate, it seems.
