How to make baked garlic shrimp oreganata
I was using jumbo size shrimp for this recipe. If you are using smaller shrimp, reduce the cooking time slightly.
If you have frozen shrimp, thaw it first. Leave in the fridge overnight or easily defrost on the kitchen counter. It will take about an hour. Seafood thaws pretty quick.
Peel and wash the shrimp with cold running water. Pat dry with paper towels and place in the medium size baking dish. Squeeze some lemon juice on top and sprinkle salt.
Mix seasoned Italian breadcrumbs (or any other seasoned breadcrumbs you like) with chopped or minced garlic, flat Italian parsley and good olive oil. The mixture should be not too wet not too dry.
Sprinkle it over the shrimp. You can lay lemon slices on top as well for a better presentation. Itās going to look very pretty!

Bake in well preheated oven for 15 minutes. If unsure that the shrimp is done, use instant meat thermometer. Stick it in shrimp, and if it does at least 145 degrees Fahrenheit itās fully cooked and ready to enjoy!
What is oreganata
Oreganata is an Italian American breadcrumb stuffed seafood dish. A seasoned bread crumb mixture made from Parmesan cheese (optionally), fresh herbs, and garlic is stuffed inside your choice of seafood, then itās baked with olive oil, and sometimes white wine until tender.
Oregano is usually added to the breadcrumb mixture and thatās part of the reason why itās called āoreganataā. Shrimp oreganata and clam oreganata are the most popular variations of this dish, but you could also top this Italian-style breadcrumb mixture over fresh white fish for a different taste.
Frequently asked questions
Oreganata and scampi are very similar Italian dishes. Both are cooked in garlic butter or olive oil sauce with fresh herbs, grated cheese, and white wine. However, the key difference is that oreganata is always made with a breadcrumb mixture and for scampi itās optional.
Often times you will see shrimp or lobster scampi sauteed in a garlic butter sauce, but it can be stuffed with breadcrumbs as well.
You can use whichever shrimp is near and available to you.
Using fresh shrimp will give the best taste and texture, but you could also use frozen shrimp that have been thawed. It can be defrosted overnight in the refrigerator or in a bowl of cold water until it is not icy anymore.
Side dishes
Shrimp oreganata is absolutely delicious if served a la carte! But if you want to make a whole filling meal add some side dishes. Any kind of salad will work: potato salad, coleslaw, greens salad with arugula or romaine lettuce. Even Caesar salad will be amazing with seafood.
Make roasted vegetables, corn on the cob, mashed potatoes or sweet potatoes. Cheesy biscuits, dinner rolls, bowl of white rice, Brussels sprout or asparagus.
You can also make a soup like clam chowder, broccoli soup, potato soup or roasted carrots or pumpkin soup puree. Options are endless!
Leftovers
Transfer shrimp from the baking dish to the glass or plastic container. Close the lid and store for up to 4 days. You can freeze leftovers as well. Reheat in the microwave.
