For the recipe i used large shrimp, 31-40 count per pound. In fact you can use any size shrimp because we will be cutting it in smaller pieces anyways. Rinse the shrimp very well and peel.
Using sharp knife chop raw shrimp in smaller pieces and put in the bowl. Chop green onions or chives and add to the shrimp. In a separate small bowl mix soy sauce, sesame oil, lemon juice, ground ginger and sesame seeds (if using).
