    Ninja Foodi's line of products is one of my favorite collections of kitchen appliances... From grilling to frying to slow cooking - and even making ice cream! - I love all of their versatile and easy-to-operate machines!

    I have a great Ninja Foodi pressure cooker recipe, but here I am showing you how to use your Ninja Foodi Possible Cooker Pro to slow cook melt-in-your-mouth tender corned beef and veggies with barely any effort.

    You can't go wrong with either corned beef recipe, but this one is really terrific for those days when you want to "set and forget it" in a crockpot. And oh my gosh, does it make the house smell incredible!

    You won't believe all of that goodness comes from only a handful of simple ingredients. We use a combination of fresh veggies and a few basic pantry staples, plus corned beef that comes with ready-to-use spices, to get that classic Irish-inspired flavor.

    One of the many great things about this recipe is that there's no need to sear or precook the meat. Simply place everything (except for the cabbage, to start) in the slow cooker in the later morning or afternoon, and let the Ninja Foodie Possible Cooker do its thing. By dinnertime you are ready to serve deliciously salty, savory, juicy and meaty corned beef and cabbage made with love - and only a little effort!

    Recipe ingredients

    Corned beef. Flat cut corned beef is best as it has less fat and is easier to slice. Purchase packaged meat with a spice or seasoning packet. This blend typically includes coriander seeds, mustard seeds, anise seeds, dill seeds, fennel seeds, and peppercorns.

    Baby carrots and small potatoes. Using precut small carrots and whole potatoes means there is no need to peel or chop. Also, keeping the skin on potatoes helps them stay hearty and not overcook so easily.

    Onion. White onions have the most bite while yellow onions tend to be sweeter. Choose whichever you prefer, peeled and quartered.

    Bay leaves. Dry bay leaves add a distinct savory, earthy flavor to the dish. But they are not edible, so discard them from the pot before serving the corned beef.

    Cabbage. Fresh green cabbage is added after the food has been cooking for a few hours. This helps to keep the leaves from getting overcooked and mushy.

    Does the corned beef need to be covered with liquid in a slow cooker?

    No, you do not need to cover the beef with water. We only use 1 cup of liquid, which is just the right amount to cook the meat and veggies without everything getting soggy.

    What not to do when cooking corned beef?

    First and foremost, do not try to cook the meat too quickly. My Ninja Foodi possible cooker corned beef recipe has been perfected for optimum juiciness. So stick to the recipe and the meat is practically guaranteed to come out tender and delicious!

    Why is my corned beef tough?

    Adding not enough liquid or overcooking the meat can cause it be tough. Also, be sure to slice the beef against the grain when ready to serve. This properly breaks up the delicate fibers of the meat, so each bite is melt-in-your-mouth tender.

    Does corned beef get more tender the longer it is cooked?

    Yes and no. It needs to be cooked long enough to slowly soften the meat. But if it continues to cook past a certain point, the corned beef can become overly soft and almost mushy. Again, cook per the recipe below and you should have no problems!

    If you have any leftovers you can store them in the fridge in the air tight container for 4-5 days. Its also very easy to reheat leftovers- just microwave them on high for 1-2 minutes and your warmed meal is ready.

    Ingredients
      

    • 3 lb corned beef with spices
    • ½ lb baby carrots
    • 1 lb small potatoes not peeled
    • 1 onion quartered
    • 2 bay leaves
    • 1 cabbage
    • 1 cup water

    Instructions
     

    • Place everything except cabbage in the possible cooker and Slow cook on high for 4 hours.
    • Add quartered cabbage and cook for another hour
