Turkey wings are very inexpensive and can feed lots of people. Wings can be prepared as an easy weekday dinner or lunch. Make them on Holidays instead of turkey breast and surprise your family and guests with new flavors. The recipe is easy and can be easily done by a beginner cook.
How to make curry turkey wings
First you will need to get nice fresh turkey wings. They are usually sold in the packs of 4 and can easily feed 4 people. If your turkey wings are frozen, thaw them overnight in the fridge or for a few hours on the counter.
Wash them and remove any leftover feathers. Pat dry with paper towels. Cover in the mixture of spices and let sit for 10 minutes (optionally).
Browning and sauteing
Meanwhile chop celery and onions. No need to chop them too fine but make sure that the chunks are not too big. Add oil to the pan (i used a cast iron skillet) and heat in on medium heat.
Add seasoned turkey wings and brown on one side for couple minutes. Don't burn! We just need to add some color. Flip wings and add chopped vegetables, arrange them around turkey. Cook for another couple minutes, stirring vegetables occasionally.
Baking
Meanwhile preheat the oven. When wings are done browning, and some water, cover the cast iron skillet with foil and place in the oven.
If you don't have a skillet that can safely go to the oven, transfer turkey and veggies in to the baking dish ,add water, cover with foil and bake. The temperature i used is not too high, just 350 degrees. It will ensure that wings will be cooked all the way and will be very tender. Cook for about 1 hour. increase cooking time if the wings are not cut in sections.
Pressure cooker directions
You can make this curry turkey recipe in pressure cooker. Instant Pot, Ninja Foodi or any other pressure cooker will work.
Would you like to save this?
Heat oil in the inner pot using saute button. Brown seasoned turkey wings in oil along with chopped celery and onion. Add one cup of water in the pot and close and lock the lid. Cook on high pressure for 20 minutes. Once done, release the pressure and carefully open the lid. Its done!
Slow cooker directions
Brown curry wings with vegetables in the skillet for a few minutes. Transfer to the crock pot. Add one cup of water. Close the lid and cook on LOW for 6 hours. Once done, stir the sauce and add chopped green onions on top.
How to make a slurry
You can make a thicker gravy by adding a slurry to the sauce. Mix 1 tablespoon of cornstarch with 2 tablespoon cold water. Mix very well until all the starch is dissolved. Add to the pot and mix it in to combine. Slurry will thicken the sauce and create a delicious gravy that you can pour over rice or mashed potatoes.
Frequently asked questions
Yes you can. Thighs or drumsticks will work just as good as turkey wings in this recipe. Usually thighs cook longer, so please add extra 20 minutes to baking time. Drumsticks will be done as soon as wings.
You can prepare curry turkey wings ahead of time and store them in the fridge in the same dish you baked them in for easy reheating. Cover with the foil or with the lid. Reheat in the preheated to 400 degrees oven for 5-10 minutes until nice and hot.
My favorite way to serve turkey wings is with mashed or roasted potatoes. Potatoes and turkey are just delicious together. You can also prepare some white rice and serve it with turkey on top and curry juices. Rice will soak up on some gravy and will be so flavorful.
Turkey wings are sold almost everywhere, especially around the Holidays. Walmart and other major grocery store has it as long as local butcher shops and meat markets. If not, you can always purchase it from the online grocery store.
Internal temperature
Just like any other type of poultry, turkey is fully cooked when its internal temperature is at least 165 degrees. If its much higher don't worry, wings has a significant amount of fat and its very hard to dry them out. Same with drumsticks and thighs. Do not overcook turkey breast though. Turkey breast will take less time to cook and if you overcook it it will become tough, dry and chewy.
Leftovers
Store curry turkey wings leftovers in the air tight plastic or glass container in the fridge for up to 5 days. You can freeze leftovers as well. If you will use a freezer safe zip lock bag or a container, store in the freezer for 6 months to 1 year easily. Thaw overnight in the fridge or for couple hours on the counter. Reheat in the oven.
