Delicious crab potato salad is not your average potato salad. Crab adds so much unique flavor to the dish and makes it an absolute hit on every party. I used real crab claw meat in the recipe but you can substitute it to chopped imitation crab meat.
Yummy potato salad made with only freshest potatoes, celery, eggs, onions, corn and real crab claw meat. Such an interesting combination of flavors that will not leave you disappointed. I really like it!
How to make crab potato salad
If you want your potatoes peeled for the salad, do that before boiling them. I like young creamy unpeeled potatoes so i cooked them right in their skin. Simmer for 10-15 minutes, depending on the size, until its fork tender. Drain the water and let potatoes cool before chopping them.
By the way, you can boil eggs at the same time as potatoes, in the same water. Just make sure to set the timer for 10 minutes and pull eggs out when it beeps. Transfer eggs to an ice bath or just very cold water. It helps with peeling process.
Chop celery and onions and add to the bowl. Chop cooled eggs and potatoes. I added canned corn to the salad but if you don't like it, leave it. Roughly chop crab meat or leave it in big chunks.
Combine mayonnaise with Dijon mustard, salt and black pepper. Pour it over the chopped ingredients and stir to combine. Add more salt to taste.

I used really large pasture raised eggs and creamy little purple and golden potatoes. Quality ingredients are the key to a delicious dish, no matter what you are making.
Crab meat
I prefer to use crab claw meat sold in plastic containers. Big cans of real crab are fine too. Of course the best would be if you could have a whole crab and remove meat out of claws. Fresh is always best. Or thaw frozen crab legs and use the meat from it. So good!

Do i need to peel potatoes? No you don't have to peel potatoes. Its personal preference and totally up to you.
What kind of potatoes are the best? Any potatoes will work really. My favorite potatoes to use in potato crab salad are red potatoes, Yukon Gold or baby creamy potatoes. Honestly i like to use potatoes that require less work that's why i choose small and don't peel them.
Can i make this salad ahead of time? Absolutely! I actually recommend making this salad the night before or at least 1 hour before you eat it to allow all the flavors to combine.
Whats the best crab meat to use? I like to use real crab claw meat sold in plastic containers or large cans. When crab is in season i am just buying the whole crab or already cleaned fresh crab meat from my local fish market.
Leftovers
Store crab potato salad leftovers in the air tight container in the fridge for 2 days. The salad contains seafood that's why i don't recommend storing it for any longer. Do not freeze.

Ingredients
- 1 lb baby potatoes
- 4 celery ribs
- ā cup mayo (add more to taste)
- 2 tablespoon Dijon mustard
- 2 eggs
- Ā½ cup corn
- 1 teaspoon salt
- 1 teaspoon black pepper
- Ā½ onion
- 1 cup crab meat
Instructions
- Boil unpeeled potatoes with eggs for about 10 minutes. Transfer eggs in to the bowl filled with cold iced water (its done to peel eggs easily).
- Chop potatoes and eggs and place into the medium size bowl.
- Chop celery, onion and crab meat. Add to the bowl along with corn. Add mayo, mustard, salt and pepper and stir to combine.
