How to make baked John Dory recipe
John Dory can be a very large fish and will definitely feed a lot of people. I used my biggest baking dish and i still had to chop little part of the tail to fit. If you have foil or parchment paper, its best to use it . This way you will not need to do any clean up really after the fish is baked.
Thinly slice tomatoes and zucchinis. My kids love these vegetables that's why i use it. You can use any vegetables you want. Onions always adds lots of flavor to any dish but there i used green onions instead. Because green onions also add a nice green color to the dish and we just love them.
Prepare the fish. If its already clean, all you need to do is to rinse it with cold water and place on top of sliced vegetables. I left the head attached but if you don't like it you can chop it off.
Season John Dory with salt, pepper and garlic powder. I don't like to add lots of seasoning on already flavorful fish. I think thyme will be great to add, either fresh or dry. Oh, and do not forget to add lemon! Cut lemon wedges and add to the baking dish and squeeze some juice on top of the fish as well.
Cook in a nicely preheated oven for 15-25 minutes, depending on the size of your fish. Mine took exactly 25 minutes to cook but hey its a 3 lb fish! So a 1 lb fish will definitely be cooked in less time. So this is a very easy John Dory recipe and even a beginner cook can make it.

Well John Dory is not a very pretty fish but very delicious and nutritious. It has lots of protein and Omega 3. This is something you want to eat weekly for a good health. Fish oil can not be replaced with anything else really. Just always make sure to eat a wild caught fish to get the benefits.
Baked John Dory has mild and slightly sweet flavor. Its very low in fat but the taste is very buttery and the flakes are soft and melt in your mouth. We really like this fish!

Nobody knows for sure. Some people refer to the Dory fish, some to a person named John Dory from old ballads. My favorite explanation is this name comes from French words 'jaune dorƩ' that means Golden Yellow.
Its funny that John Dory has two dark spots on both sides that confuse predators and let them get away successfully. Predators think that those spots are eyes that give the fish time to actually see them and escape.

- Add your favorite vegetables to roasted John Dory. If you like roasted belle peppers and onion, cut them thinly and add to the baking dish. It will be delicious! Try thinly slice potatoes and add them to John Dory as well.
- Remove spiky fins before cooking.

I really love how zucchinis and tomatoes turned out in this John Dory recipe. They are juicy, super flavorful and just zesty from the lemon. If feeding a crowd cook some white or brown rice or potatoes. It could be roasted potatoes, mashed or scalloped. Or simply boiled with dill and butter- my favorite!
Make a fresh spring salad with romaine lettuce or arugula, kale, cherry tomatoes, onion and cucumbers. Drizzle olive oil and a little bit of balsamic vinegar and enjoy your healthy dinner!

You can easily store leftovers in the fridge for up to 4 days. Its recommended to eat fish as soon as possible because it goes bad so quickly. Do not freeze roasted John Dory.

Ingredients
- 1 John Dory fish
- 1 zucchini
- 3 tomatoes
- 1 cup chopped green onions
- 1 teaspoon salt
- freshly ground black pepper
- 1 teaspoon garlic powder
- Ā½ lemon
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Spray baking dish with olive oil spray. Thinly slice zucchinis and tomatoes. Cut lemon. Place in the dish and top with half of chopped green onions.
- Wash the fish with cold running water. Pat dry with paper towels and cover with salt, pepper and garlic powder. Add some spices inside as well.
- Place fish on top of vegetables and bake for 25 minutes.
Notes
- My fish was 3 lb. Please cook for much less time and use less salt if your fish is smaller.
