Bologna might be not your ordinary choice for gravy but you will definitely love this recipe. If you have a leftover bologna and don't know where to use it or bologna gravy may remind you of your childhood, either way this recipe is worth trying.
How to make bologna gravy
If you have already pre-sliced bologna, just chop it in smaller pieces. If you have a bigger bologna cut, slice it first in bigger slices and than chop into cubes.
Pour oil into a small pan and heat it. Add chopped bologna and fry it in oil for a few minutes, until in gets browned. Remove meat and place it on the different plate.
Add flour to the oil and stir until it creates a thick paste. Let it cook for couple minutes, stirring constantly and than pour milk and water. Keep stirring and you will see how the mixture is changing to a nice gravy.
You can add more water if the mixture seem too thick. Add browned bologna pieces and stir to combine. Add garlic powder. Try a little spoonful and add salt and pepper to taste. This bologna gravy is best served with biscuits or with mashed potatoes.
What bologna to use
I like to use German pork/beef bologna, the one i would use on sandwiches at lunchtime. Its cheaper than beef only bologna and i like how it tastes more. In Russia we have our own bologna called "Doctorskaya kolbasa" which is something between German bologna or Mortadella and regular chicken bologna.
In United States i love to buy bologna from the Deli section of the supermarket or a presliced one from the fridge isle. "Oscar Mayer" is my go to brand for an already sliced bologna for sandwiches. And again, in this bologna gravy recipe i used a German bologna from a deli section of my local supermarket

Leftovers
Just like any other gravy, store leftovers in the fridge for up to 4 days. Make sure that bologna gravy is completely cool before pouring in to a container. You can also freeze gravy for up to 2 months in the freezer safe container or plastic bag.
To reheat, place it back in to the pan and heat it until soft and easy to stir. Maybe you will need to add more water if gravy will become too thick. Stir it until it reaches desired consistency.

Ingredients
- 1 cup bologna, chopped
- 2 tablespoon oil
- 1 tablespoon flour
- Ā½ cup milk
- Ā½ cup water
- salt and pepper to taste
- 1 teaspoon garlic powder
Instructions
- Heat oil in small pan. Add chopped bologna and cook for a few minutes until will browned, stirring. Remove bologna and set aside.
- Add flour to the oil and stir to combine. Keep stirring until lightly brown.
- Add milk and water and mix until all the flour is dissolved and gravy is getting thick. Add bologna back and stir.
