Shrimp is one of my favorite types of seafood to make for dinner and this Argentinian shrimp scampi recipe has to be the easiest to make! You'll love that this healthy dish is made with simple, everyday ingredients. It is also loaded with flavor and everything comes together in under 10 minutes so clean-up is a breeze.
I added red Argentinian shrimp to give this classic dish a tasty twist. These vibrant red shrimp have a wonderful sweet flavor that pairs perfectly with the garlic lemon butter sauce. Together it is a truly comforting restaurant-quality meal perfect for busy weeknights or special occasion dinners.
Recipe ingredients
Red Argentinian shrimp. 1lb peeled and deveined. They have a vibrant red color and are slightly larger than regular shrimp. I used Trader Joe's Argentinian Red shrimp for this recipe but any brand will work.
Butter and olive oil. Together both of these oils create a delicious and flavorful garlic butter sauce.
Garlic. Finely minced. Adds an incredible amount of flavor to this recipe.
Dry wine. Added to the sauce, to give a subtle richness. Use a wine you enjoy, because cooking wines usually have extra salt and other additives that we don't want in this dish.
Salt. A little bit for seasoning.
Parsley. Chopped and added to the shrimp before serving for nice color and a herby freshness.
Lemon juice. Freshly squeezed lemon juice pairs so well with seafood.
How to make this Red Argentinian Shrimp recipe
Usually red Argentinian shrimp comes in plastic packages already peeled and cleaned. If it is frozen, thaw it first in the fridge overnight. You can also thaw shrimp by leaving it on the counter for couple or three hours.
Rinse shrimp under cold running water and pat dry with paper towels. Set aside, shrimp cooks very fast so we will add it to the pan in the last moment.
Melt butter in the skillet. Add olive oil and stir. Finely chop garlic cloves or mince them and add to preheated pan. Stir and cook on low-medium heat for about 1 minute, or until fragrant.
Add just a splash of dry white wine to the pan, along with salt and pepper and simmer for couple minutes. Now its time to add out prepared shrimp.
Add cleaned shrimp to the skillet and cook, for about 2 minutes on each side. Do not overcook, or the shrimp will become dry and chewy. If unsure, check the internal temperature. It should be at least 145 degrees Fahrenheit.
Stir in lemon juice in the end and generously sprinkle dish with chopped flat Italian parsley. You can use cilantro instead, it will not affect the flavor.
What type of shrimp are they?
Argentine red shrimp are vibrant and plump deep-water shrimp. Wild-caught in the South Atlantic ocean off the coast of Argentine, they are larger than regular shrimp having a vibrant red color even in their raw state.
This shrimp variety is often compared to lobster because of its slightly sweet flavor and meaty texture.

Substitutions
Shrimp. If you can't find Argentine red shrimp feel free to use a different variety.
Butter. If you are dairy free, feel free to use simply olive oil, dairy-free butter, or the oil of your choice.
Garlic. Use pre-minced garlic from a jar to save time, or use garlic powder for a more subtle garlic flavor.
Wine. Instead of white wine, use chicken broth, vegetable broth, or seafood stock to round out the flavors in the sauce.
Variations
Serve with a pinch of red pepper flakes for color and add a bit of heat.
Add fresh lemon zest to increase the citrus flavor of this dish.
Make this a creamy red Argentinian shrimp scampi by adding heavy cream and grated parmesan cheese to the sauce.
If using frozen Argentine red shrimp make sure to thaw in a bowl of cold water for 30 minutes before cooking for the best flavor.
Frequently asked questions
Argentinian red shrimp are naturally reddish/pink when raw compared to regular shrimps' grayish color. These shrimp are also large and plump with a slightly sweet flavor.
Argentine red shrimp does have a slightly different flavor and texture than regular shrimp. It is more sweet and meaty, similar to lobster.
Leaving the tails on or off is totally up to you! I sometimes leave them on for presentation purposes but it's completely optional! Most shrimp comes already fully cleaned.
Because this shrimp is already red in its raw state instead of gray it can be tricky to know when it's ready! The shrimp is ready when it starts to curl and the flesh looks opaque instead of translucent.
Argentine red shrimp is available at many grocery stores including Trader Joe's and Costco (at least my local Costco has it). Look for it in your local fish markets, or check out online meat and seafood delivery services.
Side dish
For a healthy side dish, a nice green salad is a great idea. Mix arugula or spinach or romaine lettuce with tomatoes, bell peppers, onions and cucumbers. Drizzle olive oil mixed with balsamic and mix.
A bowl of steamy hot white rice never disappoints when served with any kind of fish or seafood. Rice will soak that delicious scampi sauce. Also try grilled, roasted or steamed vegetables like zucchinis, mushrooms, eggplant, cauliflower, broccoliā¦ you name it.
I love to use cooked shrimp in tacos as well. Delicious!

If you have any of this red Argentinian shrimp leftovers, you can store them just like any other regular leftover shrimp. Place shrimp scampi with sauce in the air tight plastic or glass container and store in the fridge for up to 4 days.Seafood spoils quick so i recommend to eat it as soon as possible.
Freezer. You can freeze leftovers as well. Transfer it to the freezer safe container or ziplock bag (saves space in the freezer!) and freeze for up to 3 months. To prevent freezer burn make sure to squeeze as much air as possible from the bag.
Reheat. Reheat in the microwave or on the skillet until heated through but not overcooked
