Stuffing. Use whichever flavor you enjoy - cornbread, chicken, turkey, or seasoned herb.
Broth. Instead of chicken broth use vegetable broth or water.
Cream of chicken soup. Use a can of cream of mushroom or cream of potato soup. Alternatively, use a mixture of heavy cream/ sour cream and cornstarch to thicken the sauce. If using canned soup, use a low-sodium variety if you are watching your salt intake.

If you prefer a crispy stuffing topping, remove the lid for the last 30 minutes of the cooking process. Or if your crockpot dish is oven-safe, place it into the oven at 400 degrees Fahrenheit for a few minutes to brown on top.
Frequently asked questions
This depends on the recipe, but in general, it's a good idea to cook chicken with a bit of liquid so it doesn't burn or dry out too much.
Chicken breasts or thighs are excellent in the slow cooker. Thighs are always tender and juicy even when cooked for long periods of time. The slow cooker is a great way to cook chicken breasts because they come out perfectly juicy. You also don't have to worry about them drying out or becoming tough.
Fully thawed chicken is best but if you are short on time it's fine to use frozen instead. Just make sure you are using boneless chicken so it can cook evenly and thoroughly. Check to make sure the internal temperature of the meat is at least 165 degrees before serving.
