What is black garlic
If you have never heard of black garlic it might seem a little strange and you might be wondering what to do with it.
Black garlic is basically garlic that has been aged or fermented in a warm and humid environment until it has reached a deep black color. It is a staple in Asian cuisines, and it's especially known for its unique flavor and texture.
Unlike the strong, pungent flavor of fresh garlic, fermented garlic has a mild and sweet flavor similar to dates or molasses. It is also much softer than fresh, having a slightly chewy and sticky texture.
Cooking with black garlic is very easy because it can be used in place of regular or roasted garlic in many recipes. Add it to marinades for meats, spread over bread, added to cheese boards, sauces, or salad dressings.

Substitutions
Chicken. You can use whichever parts of the chicken you and your family enjoy, such as chicken wings, thighs, or drumsticks. If you decide to use chicken breasts, make sure to adjust the cooking time so they don't dry out in the oven.
Black garlic. Use a black garlic dry seasoning instead of whole cloves. Roasted garlic is another great alternative because it has a similar sweet and mild garlic flavor. If you want to use regular fresh garlic, use only 2 - 3 cloves because it has a much stronger flavor than black or roasted garlic.
Oil. Use regular vegetable oil or olive oil in place of the sesame oil.
Fish sauce. Use oyster sauce, extra soy sauce, or simply leave it out.
Soy sauce. Use tamari if you are gluten-free or prefer the taste better. Coconut aminos will work too.
Variations
Honey. Add a tablespoon or two of honey to the black garlic marinade to give this dish a sweeter flavor.
Regular garlic. Make the black garlic marinade with a combination of black garlic and fresh garlic for a stronger garlicky flavor.
