Instructions
Preheat the oven to 375°F and line a 12-cup muffin tin with paper liners.
In one bowl, whisk 2 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon salt and 1½ teaspoons cinnamon.
In another bowl, whisk 2 eggs, ½ cup brown sugar, ¼ cup granulated sugar, ½ cup oil, ¾ cup milk and 1 teaspoon vanilla until smooth.
Pour the wet ingredients into the dry and stir until just combined, then fold in ¾ cup chopped pecans.
Divide the batter among the 12 muffin cups, filling each nearly full. Press 1 pecan half onto each and sprinkle with the cinnamon sugar (1 tablespoon sugar mixed with ½ teaspoon cinnamon).
Bake for 18 to 20 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing.

Toast the pecans in a dry pan or the oven for a few minutes first for the richest flavor.Do not overmix the batter. Stir just until the flour disappears so the muffins stay light.Fill the cups nearly full for tall, bakery-style tops, since these muffins do not spread much.Add the cinnamon sugar right before baking for that lightly crackly, sweet-spiced top.Make it a loaf. Bake the batter in a greased loaf pan at 350°F for 45 to 55 minutes.Store at room temperature for 2 days or in the fridge up to 1 week. Freeze up to 3 months. Reheat in the microwave for 15 to 20 seconds or the air fryer at 350°F for 2 minutes.
