This juicy air fryer tri tip uses a simple dry rub and the air fryer to turn out a beautifully browned, medium rare roast with no grill required. Tri tip is lean and cooks fast, so the air fryer gives you a seared crust and a tender, pink center in about 25 minutes.
Pat the tri tip roast dry with paper towels. Rub all over with the 1 tablespoon olive oil.
Mix the 1 teaspoon salt, ½ teaspoon pepper, 1 teaspoon garlic powder, 1 teaspoon paprika, and ½ teaspoon onion powder, and rub the blend over the entire roast. Let it sit 15 minutes.
Place the whole roast in the air fryer basket.
Air fry at 400°F for about 10 to 12 minutes per pound, flipping halfway, until it reaches 130 to 135°F for medium rare. A 2-pound roast takes about 22 to 28 minutes and a 3-pound roast about 30 to 36 minutes. Start checking the temperature early, and if the outside browns too fast, lower to 375°F after flipping.
Transfer to a cutting board, rest for 10 minutes, then slice thinly against the grain.
Tip: Tri tip is lean, so pull it about 5°F before your target temperature, rest it, and always slice thin against the grain for the most tender bite.
